Ingredients
- 1 cup Quick Oats
- 4 tbsp Coconut Oil
- 1 tbsp Maple Syrup
- 3 tbsp Honey
- 1 tsp Vanilla Extract
- 1 cup Puffed Cereals - note 1
- ¼ cup Roasted Salted Peanuts - note 2
- ¼ cup Chocolate Chips - note 3
Equipment
Instructions
- Preheat your oven to 350°F (180°C).
- Spread your oats on a baking tray and roast them for about 4 minutes, until they are slightly golden brown. (You can skip this step if you don’t like a roasted taste.)
- Meanwhile, mix coconut oil, maple syrup, and honey in a small saucepan. Stir it over medium to low heat until everything is melted and dissolved.
- Let the oats and the maple syrup mixture cool for about 5 minutes.
- Now mix the cooled oats, puffed cereals, peanuts and the maple syrup mixture. Add the vanilla extract.
- Lastly, add the chocolate chips. If you want them to melt, you can add them earlier, while the oats are still warm.
- Stir everything until combined and spread the mixture into a silicone bar mold or onto a parchment-lined tray. Flatten it down and put it in the fridge.
- Once hardened, cut the bars and store them in an airtight container.
