Preheat your oven to 350°F (180°C).
Spread your oats on a baking tray and roast them for about 4 minutes, until they are slightly golden brown. (You can skip this step if you don’t like a roasted taste.)
Meanwhile, mix coconut oil, maple syrup, and honey in a small saucepan. Stir it over medium to low heat until everything is melted and dissolved.
Let the oats and the maple syrup mixture cool for about 5 minutes.
Now mix the cooled oats, puffed cereals, peanuts and the maple syrup mixture. Add the vanilla extract.
Lastly, add the chocolate chips. If you want them to melt, you can add them earlier, while the oats are still warm.
Stir everything until combined and spread the mixture into a silicone bar mold or onto a parchment-lined tray. Flatten it down and put it in the fridge.
Once hardened, cut the bars and store them in an airtight container.
