Oat Chocolate Bars

  • Preheat your oven to 350°F (180°C).
  • Spread your oats on a baking tray and roast them for about 4 minutes, until they are slightly golden brown. (You can skip this step if you don’t like a roasted taste.)
  • Meanwhile, mix coconut oil, maple syrup, and honey in a small saucepan. Stir it over medium to low heat until everything is melted and dissolved.
  • Let the oats and the maple syrup mixture cool for about 5 minutes.
  • Now mix the cooled oats, puffed cereals, peanuts and the maple syrup mixture. Add the vanilla extract.
  • Lastly, add the chocolate chips. If you want them to melt, you can add them earlier, while the oats are still warm.
  • Stir everything until combined and spread the mixture into a silicone bar mold or onto a parchment-lined tray. Flatten it down and put it in the fridge.
  • Once hardened, cut the bars and store them in an airtight container.

Notes

 
Note 1: You will find different puffed grains without added sugar. Choose whichever taste you like. I’ve tried puffed rice and kamut, and both worked very well.
Note 2: Just chop the peanuts a little before adding them to the mixture. If you prefer a crunchier bite, you can leave them as they are.
Note 3: Any type of chocolate chips will work fine. My kids like milk chocolate chips, while I prefer the semi-sweet version. So, I either make half-and-half or switch it up each time I prepare the bars.
Storage: After cutting the bars, store them in an airtight container at room temperature for up to 7 days.
