Ingredients
- ½ cup Butter - note 1
- ½ cup All purpose Flour
- 3 tbsp Sugar
- ¼ cup Monk Fuit & Erythritol Sweetener
- ½ tsp Vanilla Extract
- ½ tsp Baking Powder
- 2 Eggs
- 1 Zest of an organic Lemon
Optional
- ½ cup Powdered Sugar
- 1½ – 2 tsp Lemon Juice

Instructions
- Preheat your oven to 350℉.
- Beat the eggs with the sugars until frothy.
- Mix in the flour, vanilla extract, baking powder, lemon zest, and butter, and combine everything well.
- Spray the donut pan with baking oil spray.
- Fill the dough with the medium cookie scoop, leaving a little of space at the top of the pan.
- Place in the preheated oven and bake on the middle rack for about 12 – 15 minutes.
- Test if the donuts are baked through with a toothpick. If no batter sticks to it, they are done.
- Let them cool on a cooling rack.
Optional
- Mix the powdered sugar with lemon juice until you have a thick glaze. Dip the donuts into the glaze and let the excess glaze drip back into the bowl where you prepared it.
Notes
Note 1: You can also use margarine or plant-based butter. I use unsalted sweet cream butter for this recipe.
Storage: Keep them at room temperature in a cake container for up to 4 days. You can also freeze them in a freezer bag for up to 3 months.
